National Electronic Funds Transfer (NEFT)

Before the computerisation of banks, money was transferred from one account to another account in a different branch by way of Demand drafts,Mail Transfer and Telegraphic transfer.

Now all the banks are transferring money either by way of National Electronic Funds Transfer (NEFT) or by way of Real Time Gross Settlement system(RTGS). Banks have also provided these facilities directly to the customers through their |Internet Banking accounts thus enabling the customer to transfer the money to the customer of other banks.

In this post we will see how NEFT system functions in the banks:

Q.1. What is NEFT?

 National Electronic Funds Transfer (NEFT) is a nation-wide payment system facilitating one-to-one funds transfer. Under this Scheme,  individuals, firms and corporates can electronically transfer funds from any bank branch to any individual, firm or corporate having an account with any other bank branch in the country participating in the Scheme.



Q.2. Are all bank branches in the country part of the NEFT funds transfer network?

 List of bank-wise branches which are participating in NEFT is provided in the website of Reserve Bank of India at http://www.rbi.org.in/scripts/neft.aspx

Q.3. Who can transfer funds using NEFT?

 Individuals, firms or corporates maintaining accounts with a bank branch can transfer funds using NEFT. Even such individuals who do not have a bank account (walk-in customers) can also deposit cash at the NEFT-enabled branches with instructions to transfer funds using NEFT. However, such cash remittances will be restricted to a maximum of Rs.50,000/- per transaction.

Such customers have to furnish full details including complete address, telephone number, etc.NEFT, thus, facilitates originators or remitters to initiate funds transfer transactions even without having a bank account.

Q.4. Who can receive funds through the NEFT system?

 Individuals, firms or corporates maintaining accounts with a bank branch can receive funds through the NEFT system. It is, therefore, necessary for the beneficiary to have an account with the NEFT enabled destination bank branch in the country.

The NEFT system also facilitates one-waycross-border transfer of funds from India to Nepal. This is known as the Indo-Nepal Remittance Facility Scheme.

A remitter can transfer funds from any of the NEFT-enabled branches in to Nepal, irrespective of whether the beneficiary in Nepal maintains an account with a bank branch in Nepal or not. The beneficiary would receive funds in Nepalese Rupees. Q.5. Is there any limit on the amount that could be transferred using NEFT?

 No. There is no limit – either minimum or maximum – on the amount of funds that could be transferred using NEFT. However, maximum amount per transaction is limited to Rs.50,000/- for cash-based remittances and remittances to Nepal.

Q.7. Whether the system is centre specific or has any geographical restriction?

No. There is no restriction of centres or of any geographical area within the country. The NEFT system takes advantage of the core banking system in banks. Accordingly, the settlement of funds between originating and receiving banks takes places centrally at Mumbai, whereas the branches participating in NEFT can be located anywhere across the length and breadth of the country.

Q.6. What are the operating hours of NEFT?

Presently, NEFT operates in hourly batches - there are twelve settlements from 8 am to 7 pm on week days (Monday through Friday) and six settlements from 8 am to 1 pm on Saturdays.

Q.7. How does the NEFT system operate?

Step-1 : An individual / firm / corporate intending to originate  transfer of funds through NEFT has to fill an application form providing details of the beneficiary (like name of the beneficiary, name of the bank branch where the beneficiary has an account, IFSC of the beneficiary bank branch, account type and account number) and the amount to be remitted. The application form will be available at the originating bank branch.

The remitter authorizes his/her bank branch to debit his account and remit the specified amount to the beneficiary. Customers enjoying net banking facility offered by their bankers can also initiate the funds transfer request online. Some banks offer the NEFT facility even through the ATMs. Walk-in customers will, however, have to give their contact details (complete address and telephone number, etc.) to the branch. This will help the branch to refund the money to the customer in case credit could not be afforded to the beneficiary’s bank account or the transaction is rejected / returned for any reason.

Step-2 : The originating bank branch prepares a message and sends the message to its pooling centre (also called the NEFT Service Centre).

Step-3 : The pooling centre forwards the message to the NEFT Clearing Centre (operated by National Clearing Cell, Reserve Bank of India, Mumbai) to be included for the next available batch.

Step-4 : The Clearing Centre sorts the funds transfer transactions destination bank-wise and prepares accounting entries to receive funds from the originating banks (debit) and give the funds to the destination banks(credit). Thereafter, bank-wise remittance messages are forwarded to the destination banks through their pooling centre (NEFT Service Centre).

Step-5 : The destination banks receive the inward remittance messages from the Clearing Centre and pass on the credit to the beneficiary customers’ accounts.

Q.8. What is IFSC?

 IFSC or Indian Financial System Code is an alpha-numeric code that uniquely identifies a bank-branch participating in the NEFT system. This is an 11 digit code with the first 4 alpha characters representing the bank, and the last 6 characters representing the branch. The 5th character is 0 (zero). IFSC is used by the NEFT system to identify the originating / destination banks / branches and also to route the messages appropriately to the concerned banks / branches.

Q.9. How can the IFSC of a bank-branch be found?

 Bank-wise list of IFSCs is available with all the bank-branches participating in NEFT.List of bank-wise branches participating in NEFT and their IFSCs is available on the website of Reserve Bank of India athttp://www.rbi.org.in/Scripts/bs_viewcontent.aspx?Id=2009 . All the banks have also been advised to print the IFSC of the branch on cheques issued to their customers. For net banking customers many banks have enabled online search / pop-up of the IFSC of the destination bank branch.

Further, banks have also been advised to ensure that their branch staff provide necessary assistance to customers in filling out the required details, including IFSC details, in the NEFT application form, and also help in ensuring that there is no mismatch between the IFSC code and branch details of beneficiary branch as provided by the customer.

Q.10. What are the processing or service charges for NEFT transactions?

The structure of charges that can be levied on the customer for NEFT is given below:

a) Inward transactions at destination bank branches (for credit to beneficiary accounts)
– Free, no charges to be levied from beneficiaries

b) Outward transactions at originating bank branches – charges applicable for the remitter
-  For transactions up to Rs  10,000 : not exceeding Rs 2.50 (+ Service Tax)
- For transactions above Rs 10,000 up to Rs  1 lakh: not exceeding Rs 5 (+ Service Tax)
-  For transactions above Rs 1 lakh and up to Rs 2 lakhs: not exceeding Rs 15 (+ Service Tax)
 For transactions above Rs 2 lakhs: not exceeding Rs 25 (+ Service Tax)

c) Charges applicable for transferring funds from India to Nepal using the NEFT system (under the Indo-Nepal Remittance Facility Scheme) is available on the website of RBI at http://rbi.org.in/scripts/FAQView.aspx?Id=67
With effect from 1st July 2011, originating banks are required to pay a nominal charge of 25 paise each per transaction to the clearing house as well as destination bank as service charge. However, these charges cannot be passed on to the customers by the banks.

Q.11. When can the beneficiary expect to get the credit to his bank account?

The beneficiary can expect to get credit for the first ten batches on week days (i.e., transactions from 8 am to 5 pm) and the first five batches on Saturdays (i.e., transactions from 8 am to 12 noon) on the same day. For transactions settled in the last two batches on week days (i.e., transactions settled in the 6 and 7 pm batches) and the last batch on Saturdays (i.e., transactions handled in the 1 pm batch) beneficiaries can expect to get credit either on the same day or on the next working day morning (depending on the type of facility enjoyed by the beneficiary with his bank).

Q.12. Who should be contacted in case of non-credit or delay in credit to the beneficiary account?

 In case of non-credit or delay in credit to the beneficiary account, the NEFT Customer Facilitation Centre (CFC) of the respective bank can be contacted (the remitter can contact his bank’s CFC; the beneficiary may contact the CFC of his bank). Details of NEFT Customer Facilitation Centres of banks are available on the websites of the respective banks. The details are also available on the website of Reserve Bank of India at http://www.rbi.org.in/Scripts/bs_viewcontent.aspx?Id=2070 .

If the issue is not resolved satisfactorily, the NEFT Help Desk (or Customer Facilitation Centre of Reserve Bank of India) at National Clearing Cell, Reserve Bank of India, Mumbai may be contacted through e-mail or by addressing correspondence to the General Manager, Reserve Bank of India, National Clearing Centre, First Floor, Free Press House, Nariman Point, Mumbai – 400 021.

Q.13. What will happen if credit is not afforded to the account of the beneficiary?

If it is not possible to afford credit to the account of the beneficiary for whatever reason, destination banks are required to return the transaction (to the originating branch) within two hours of completion of the batch in which the transaction was processed.

For example, if a customer submits a fund transfer request at 12.05 p.m. to a NEFT-enabled branch, the branch in turn forwards the message through its pooling centre to the NEFT Clearing Centre for processing in the immediately available batch which (say) is the 1.00 pm batch. If the destination bank is unable to afford the credit to the beneficiary for any reason, it has to return the transaction to the originating bank, not later than in the 3.00 pm batch. On receiving such a returned transaction, the originating bank has to credit the amount back to account of the originating customer. To conclude, for all uncredited transactions, customers can reasonably expect the funds to be received back by them in around 3 to 4 hours time.

Q.14. Can NEFT be used to transfer funds from / to NRE and NRO accounts?

NEFT can be used to transfer funds from or to NRE and NRO accounts in the country. This, however, is subject to the adherence of the provisions of the Foreign Exchange Management Act, 2000 (FEMA) and Wire Transfer Guidelines.

Q.15. Can remittances be sent abroad using NEFT?

No. However, a facility is available to send outward remittances to Nepal under the Indo-Nepal Remittance Facility Scheme.

Q.16. What are the other transactions that could be initiated using NEFT?

 Besides personal funds transfer, the NEFT system can also be used for a variety of transaction including payment of credit card dues to the card issuing banks. It is necessary to quote the IFSC of the beneficiary card issuing bank to initiate the bill payment transactions using NEFT.

Q.17. Can a transaction be originated to draw (receive) funds from another account?

No. NEFT is a credit-push system i.e., transactions can be originated only to transfer / remit funds to a beneficiary.

Q.18. Would the remitter receive an acknowledgement once the funds are transferred to the account of the beneficiary?

Yes. In case of successful credit to the beneficiary's account, the bank which had originated the transaction is expected to send a confirmation to the originating customer (through SMS or e-mail) advising of the credit as also mentioning the date and time of credit. For the purpose, remitters need to provide their mobile number / e-mail-id to the branch at the time of originating the transaction.

Q.19. Is there a way for the remitter to track a transaction in NEFT?

Yes, the remitter can track the NEFT transaction through the originating bank branch or its CFC using the unique transaction reference number provided at the time of initiating the funds transfer. It is possible for the originating bank branch to keep track and be aware of the status of the NEFT transaction at all times.

Q.20. What are the pre-requisites for originating a NEFT transaction?

 Following are the pre-requisites for putting through a funds transfer transaction using NEFT –
  • Originating and destination bank branches should be part of the NEFT network
  • Beneficiary details such as beneficiary name, account number and account type, name and IFSC of the beneficiary bank branch should be available with the remitter
  • For net banking customers, some banks provide the facility to automatically pop-up the IFSC once name of the destination bank and branch is highlighted / chosen /   indicated / keyed in.
Q.21.  What are the benefits of using NEFT?

 NEFT offers many advantages over the other modes of funds transfer:
  • The remitter need not send the physical cheque or Demand Draft to the beneficiary.
  • The beneficiary need not visit his / her bank for depositing the paper instruments.
  • The beneficiary need not be apprehensive of loss / theft of physical instruments or the likelihood of fraudulent encashment thereof.
  • Cost effective.
  • Credit confirmation of the remittances sent by SMS or email.
  • Remitter can initiate the remittances from his home / place of work using the internet banking also.
  • Near real time transfer of the funds to the beneficiary account in a secure manner.

3. Don't let the hair get in the way: Many attackers will choose the hair as an easy target to grab. It's better to let your hair out and tuck it into your collar.

4. Have a weapon to reach for: An umbrella, a set of keys or a pen can make all the difference in a moment of crisis. Remember where they are and be prepared to draw them if you feel threatened.

5. Call for help: Calling for help may not provide it but it may scare the attacker enough to allow you to escape. Many women get confused and don't know what to scream. Shouting 'fire' for instance, can be better and more attention grabbing than simply yelling 'help'.

6. Know the weak spots in the body: If you do find yourselves in a physical confrontation, you can scratch, pull, hit or grab, as you aim directly to one of the five weak spots: Eyes, nose, neck, knees and groin!

7. Don't be scared to fight: Many women are scared to strike back because they are scared of their assailant's anger, or are afraid to hurt themselves. The punch you give may hurt you, but the pain is minor and if it's enough to allow you to escape - it's well worth it.
8. Take and oppurtunity to run: If you've identified a good time to run away from the confrontation, do it. Escaping is always better than confronting, and these oppurtunities will not present themselves a second time.

9. Keep your ears open: Don't listen to music while walking through a bad neighborhood, and don't play things on your cellphone. You should be aware of your surroundings and be able to hear your attackers coming.

10. Use things around you: Look for stuff that might scare him away, break a window, turn on a car alarm or let some trash cans fly.

11. Remain calm: The worst thing is to panic. This is of course a very stressful situation, but keeping your cool will do much more to save you.

How to escape various holds:

1. Chocked from the back: Use your heel to scratch the attacker's lower leg, inflicting sharp pain he can't ignore.

2. Held from the back: Hit your head backwards or kick your heel in the direction of the crotch.

4. Escaping a choke hold: Bend down and lean forward. Give him a good head butt on the chin so he bites his tongue, and finish with a stronng kick to the groin.

Harvest Turkey Soup with Jamaican Spice




My favorite part about thanksgiving other then chillin with the fam is left over turkey. I look forward to it all year and even buy an extra big turkey to cook and freeze for turkey soup, posole and other savory goodies.


I had butternut squash and asparagus in my crisper and decided that they would be perfect in a turkey soup. Crisp corn, garlic, mushrooms and a pinch of Jamaican allspice made this a wonderful  sweet  and  savory  soup the whole family loved.



Ditch the canned soup and try this the next time your body craves some comfort food.








Harvest Turkey Soup
2 cups cooked, cubed turkey
6 cups home made or good quality chicken broth
2 cups cubed butternut squash
1 cup sweet corn
1 cup chopped asparagus
1-8 oz can mushrooms, drained
1 small yellow onion, chopped
3 cloves garlic, minced                                                                                          
1 teaspoon olive oil                                                                                                                               1 teaspoon Bragg's Season All                                                                                                       1 teaspoon Jamaican allspice
salt and pepper to taste

In a heavy based soup pot, heat oil over med-high heat. Add onion, cook till golden brown. Add garlic, cook 1 more minute. Add broth and squash, cook for 10 minutes. Add remaining ingredients, lower heat, cover and cook till heated through, about 7 minutes.

Fight the Holiday Fat ~ Delicious Snacks and Light Meals! ~ All about Beets

So who got through Thanksgiving without stuffing themselves silly?  * hangs head in shame...
I pep talked myself till I was sick of hearing the sound of my own voice but managed to fill my plate and go back for seconds when it came down to it. That wouldn't be so bad except that while we are extremely lucky in that we have lots of family close by, it also means we have 2 or 3 T-Day dinners and are sent home with left over rolls and pies galore! Even my 5 year old, Jack exclaimed as we made our way to Papa and Nanna's for our 3rd ( his 4th including his Kindergarten feast) holiday party "Thanksgiving, Thanksgiving, Thanksgiving! Is it ever going to end!" 



 It's o.k., I'm not complaining really I just need to nip it in the bud and stick to a mostly
Raw veggie/fruit and whole grains and legume diet so I will still fit into my jeans after Christmas!
Here are some of my favorite low-calorie, vitamin rich snacks and light meals.













Last week I was at the grocery store with my 4 year old, Nolan and he pointed to some bunches of Organic beets and said "What's that?" I realized that we have only ever had pickled beets in our salads and immediately picked up a bunch of beets to take home with us.





Simple Beet and Orange Salad

To Make Salad:
In a medium sauce pan, bring 3 cups of water to a boil. Trim and wash beets, no need to peel. Cut them into 2 inch pieces to cut down on cooking time! Boil gently for 30-40 minutes until fork pierces them easily.
Remove, let cool. Skins should slide off very easily now.  Toss cooled beets with orange segments and squeeze some orange juice over top. Fresh mint would be lovely tossed in with this salad!

NUTRITION:
Beets are surprisingly sweet and mild tasting and make an excellent snack with oranges and in salads.

They are super easy to prepare and are a vitamin mega veggie with very high levels of A, B1, B2, B6 and C!

While the sweet beet root has some of the minerals in its greens to a lesser degree, it is also a remarkable source of choline, folic acid, iodine, manganese, organic sodium, potassium, fiber and carbohydrates in the form of natural digestible sugars.

The beets belong to the same family as chard and spinach. Beet leaves have a bitter taste like chard, but are rich in chlorophyll and higher in iron than spinach! Although bitter, the greens have a higher nutritional value than its roots. The greens have high levels of calcium, magnesium, copper, phosphorus, sodium and iron.


Both beet root and beet greens are very powerful cleansers and builders of the blood.

 HEALTH BENEFITS:

Beets have long been known for its amazing health benefits for almost every part of the body.

  • Acidosis: Its alkalinity is essential and effective in combating acidosis.


  • Anemia: The high content of iron in beets regenerates and reactivates the red blood cells and supplies fresh oxygen to the body. The copper content in beets help make the iron more available to the body. A great blood builder.


  • Atherosclerosis: This wonderful crimson juice is a powerful solvent for inorganic calcium deposits that cause the arteries to harden.


  • Blood pressure: All its healing and medicinal values effectively normalizes blood pressure, lowering high blood pressure or elevating low blood pressure.


  • Cancer: Betaine, an amino acid in beet root, has significant anti-cancer properties. Studies show that beets juice inhibits formation of cancer-causing compounds and is protective against colon or stomach cancer.


  • Constipation: The cellulose content helps to ease bowel movements. Drinking beets juice regularly will help relieve chronic constipation.

Choosing and Storing Beets: Choose beet roots that are firm and unwrinkled. With the greens attached, beets can keep for only three to four days in the fridge as the root has to supply moisture to the leaves. Without the greens attached, beet root can keep for a couple of weeks.

Beets with round bottoms are sweeter than flat-bottomed ones. Eat beets fresh to enjoy its flavor better. Do not overheat beets when cooking as heat destroys all the essential nutrients. Remove the skin before cooking.



 HOW CAN YOU GET MORE BEETS INTO YOUR DIET?
  1. Boil, steam or pickle them and add them to salads.

  2. Eat them with a variety of fruits and veggies, they are sweet all by themselves!

  3. Juice them or blend them with other fruits or veggies for an amazing detox!


A Word of Caution!
Individuals with a history of oxalate-containing kidney stones should limit their consumption of beets.


As beetroot juice is very potent, do not consume too much, especially if your body is not yet accustomed to it. For a beginner, start with the juice of half a medium-sized beetroot once a week, slowly increasing to one whole beetroot a week.

This delicious juice is so potent that it may cause some dizziness during cleansing as toxins are being eliminated. This process may cause some discomfort but there is nothing to be alarmed about. During this time, drink plenty water also to flush out the toxic materials.

Chipotle en Adobo Butternut Squash Lasagna {#12 Weeks of Winter Squash}



























My OCD-ness can be a really annoying thing. Any time I say "This will only take 5 minutes." I find myself analyzing the fine details 90 minutes later in search for the perfect project. This not only goes for blogging which is time consuming pretty much no matter how you go at it but in just about every aspect of my life. Granted I've painfully learned how to choose my battles over the years, especially since having 4 children (if anything can put a cramp in your quest for perfection, it's children.  The dolls.







Another thing that can get a girl to cut her quest for the perfect blog post abruptly short would be that she has a new book series that she's reading {The Divergent series, have you read it?} and a very short window on a weeknight in which to sneak in a page or two without  being interrupted every 3 1/2 minutes and maybe stay awake long enough after the kids have gone to bed to read an entire chapter. We won't discuss how much of the fine details I retain. Names elude me in real life, characters in books are difficult to commit to these days.


Unless of course it's a brand new (in my world anyway)  hot teen novel that involves drama at every turn of the page and Love at First Site, can't live without you, you take my every breath away even though we are in the midst of a post-apocalyptic, I'm the only one who can save the world sort of state.

It happens.

I may have somewhat of a tough exterior, but I just so happen to enjoy a good 'romance' novel so long as it involves high impact, high stress non-realistic situations which may or may not involve  zombies/vampires or a bunch of gorgeous 16 year old's defending the last of mankind just like any other  respectable women in her 30's does.

Right?


Right.








My point, and I do have one as usual, is that while the recipe process and photography session for this post took many hours of preparation, fine tuning and self scrutinization I'm afraid that I must say good bye quite abruptly….

What? It's too late for that?  Well then please forgive any punctuation or grammar mistakes in this post because I really must go find out what Tris and Four are going to do about the predicament they've managed to get themselves into…… again, with the Euridite and the Candor. This is serious people.





Before I say goodnight I must say that this is any lasagna lovers DREAM!  So not your everyday, ordinary lasagna by any standards, this one packs a punch you won't soon forget. It still has your comfort food qualities except for roasted butternut squash tossed in chipotles en adobo sauce was used in the mix and sweet turkey sausage was thrown in to compliment the smokey heat.


 Really, there are very few words that come to mind to describe how freaking amazing this dish was and I don't use the word freaking very lightly my friends.




Sharp provolone cheese and light and fluffy ricotta really balanced out the heat in this dish. It's like you get a swift kick of smokey, delicious heat on your taste buds and then are swiftly soothed by ricotta's creamy coolness. 








Chipotles are dried, smoked jalapeƱos. Adobo is a tangy, slightly sweet red sauce. Put them together in a can and they become a versatile pantry staple. Use just the chipotles for intense smoky chile heat or just the sauce for a sour-sweet flavor and a slightly less fiery smoky heat.






Apparently, I seem to take for granted the fact that some things that may be "simple" for me in the kitchen are not simple for most of my friends. I named my blog "Simply Healthy Family" because I wanted to share simple, healthy and delicious snacks and meals with everyone, Novice cook, busy parent or anyone looking to expand their current palate or cooking ability. So when I get feedback saying "What the heck is Thyme, Saffron, Quinoa?" etc. I feel like I need to take the time to add in a bit more instructional and informative posts on SHF.



So, for those of you who have ever looked at the winter squash bins in the super market and thought they were purely ornamental, here's to you.

First, they really are super easy to prepare. One of the few fuss free and forgiving vegetables out there. Once you get past your fear of peeling the hard outer peel your good to go!



A veggie peeler won't likely do the job with most winter squash sot grab a good butcher knife and cut off both ends. Stand it on one end and careful cut off the peel. It's really not as hard as you might think. 

Now, cut the butternut squash in half, lengthwise and scoop out the seeds with a spoon, discard.




Turn squash over and cut lengthwise into 1 inch strips.





Turn each piece flat and cut off the small 'hook' ends into 1 inch pieces. 





Now, cut the thicker lengths of squash in half, lengthwise again so that they will be uniform to 1 inch size. Cut the lengths of squash into 1 inch square pieces. This will ensure they cook evenly.




For this lasagna recipe, you will need to quickly cook the diced squash somehow. You could throw them into a microwave bowl, cover and cook an high for 5 minutes (I stray away from microwaves if possible partly because of potential nutrient loss and mostly because of definent flavor loss.)

I recommend either roasting them in your already preheated oven for 10 minutes or my preferred method, drizzled with (garlic infused) olive oil and pan roasting them for 7-10 minutes till just caramelized and slightly cooked. 

You will want to pre-cook them either way because they will take longer to cook then the rest of the ingredients.







I had to show you this picture of freshly grated Provolone cheese (Parmesan on the next photo). It may seem like fresh, whole cheeses are more expensive but when you grate them yourself you end up with way more for your money not to mention an incredible difference in flavor to those recipes you put so much time into!!!






No words necessary I think. Here are the layering steps. I just had fun making and photographing it. Silly hobby right?

I used a small amount of sweet turkey sausage in the recipe to satisfy the masses. I like the mild flavor of turkey and loved the way the sweet sausage kept the smokey heat of the chipotle in check. Obviously,  the turkey can be omitted and this will still be a very hearty and satisfying vegetarian meal. I totally dig that.








Finished, beautiful chipotle lasagna. FYI, I made a second lasagna without the chipotle sauce for the kids. It really does pack a punch. Also, I strongly suggest that if your new to spice/heat that you start with a small amount of the chipotle en adobo and go from there.




Ingredients

1 package of oven ready lasagna noodles
1/2 lb. sweet turkey sausage, browned
1 jar of your favorite marinara sauce
1small-medium butternut squash, peeled and chopped as per instructions above
1 can chipotles en adobo sauce
4 cups chopped fresh spinach
2 medium yellow onions, chopped
2, 15 oz. cartons of ricotta cheese
1 1/2 - 2 cups sharp provolone cheese, grated
1/2 cup freshly grated parmesan cheese
1/4 cup fresh parsley, chopped

Optional:
light sour cream
olives


Putting it all together:

Preheat oven to 350F

In a large skillet, brown sausage and onion. Drain and set aside.
Spoon chipotles en adobo sauce in a small food processor, this is where my little manual one comes in very handy, and process till smooth. Place cubed squash into a large bowl and toss with sauce.
Lightly coat a casserole dish with cooking spray. Layer lasagna as pictured above, sauce, noodles, squash and sausage mixture, spinach, cheeses. Repeat. Make sure the top layer is covered lightly in sauce so the noodles can cook.

Cover loosely with foil and bake at 350F for 30 minutes. (remember to pre cook your squash for a few minutes as described above!)

Uncover and cook for an additional 30 minutes.

Let cool for 10 minutes before cutting. Serve with cool sour cream and olives. Don't forget the salad!

5 Reasons to Work Out During the Holidays

Hello and happy Monday!  I hope you had a great Thanksgiving and long relaxing weekend.  I had a nice Thanksgiving, but ended up eating way too much.  I went for a great walk/jog in our neighborhood park on Friday morning and it felt so good to get outside and get moving.  That jog made me realize how important it is to keep working out for the rest of the year.  With the Christmas holiday approaching and a schedule that is extra full, workouts can be the first thing to go.   But, I encourage you (and myself) to stick with (or start) exercising for these reasons:

1.  Reduce Your Stress.  For some of us, the holidays can be a stressful time of year and working out definitely helps to alleviate those tensions.   Even if I don't feel like going to the park or gym, by the time I'm finished, I feel so much better!  I have never regretted a workout, but I have regretted not working out.  Working out helps clear my mind and improve my mood a ton.

2.  Working Out Helps You Eat Healthier.  This is true for me, but I wonder if it's true for you too?? When I'm working out consistently, I tend to eat better.  I recognize that I worked hard at the gym and I don't want to "blow it" by eating poorly.  On the other hand, if I'm not working out, I tend to eat badly- indulging in way too many desserts.  It's a double whammy either way.

3.  Finish Strong.  For me, I've worked really hard to get into good shape and I want to maintain what I've accomplished.  If you've done the same, don't spoil it by quitting now!

4.  Be Ahead of the Game for the New Year.  When the New Year comes and everyone resolves to "get in shape" you'll be ahead of the curve!  How great will that feel?!

5.  No Guilt for Small Indulgences.  I try to eat healthy most of the time, but I admit to having a sweet tooth and indulging in desserts (and wine!).  I don't think total deprivation is a good thing and knowing I work out helps remind me that it's okay to indulge during the holidays without feeling guilty.

I don't tell you anything that I don't tell myself.  Writing this blog helps motivate me to continue my efforts at living healthy too.  My leg is feeling better, so I plan to pick back up my Live Fit Trainer.  I made my meals for the week on Sunday and I plan to Finish Strong and start the New Year off right!
