My Secret Weapon to Beat the Heat. Strawberry-Coconut Smoothies P.S. Dear Monsoon: Please hurry.




Rain would be a true God send right now here in Phoenix. It always looks like even the cacti are going to give up and die during the endlessly long summer's here. I guess too much of anything can wear on one's nerves. Come July, after most people get tired of mindlessly commenting or joking about the stifling dry heat, all one can do is wipe off the continual beads of sweat rolling down their necks and pray for the monsoon.

Monsoon season is nothing short of a true miracle. Natures wrath at her finest. After months and months without a single drop of rain the sky darkens without notice and beautiful violent rains pour from the wakened sky and hit the hard, cracked desert floor. There is no drier dust than that found in the Arizona desert in July. Just when the cacti start to wilt and the weary desert animals are ready to call it quits, God sends them relief. And He doesn't skimp on the job. 

The smell is my favorite part of the monsoons. It's no ordinary rain. The layers of dust and sand that have accumulated on the streets and in my nose can only be washed away by the heavy rains of August. I wait anxiously starting mid July for the chance to sit outside amidst the sheets of rain and furious winds that wash every trace of dust from the startled desert. It lasts only for a few minutes but is enough to quench the deserts thirst for many more months. It is energizing   refreshing   uplifting invigorating and restores even the most lifeless soul.


During these long, hot months in the desert it is difficult to want to eat, let along cook anything. We need to save every single ounce of energy that we have so that the heat doesn't drag us down and reduce us to ashes. Water is our best friend but my secret weapon is coconut water which instantly rejuvenates me and gives me the energy to make it through the entire days obstacles which includes getting the mail while the sun is still out.

When I'm feeling like I want a sweet treat and need some extra refreshing, I always go for these Strawberry-Coconut smoothies. They take all of 3 minutes to make and are a gazillion times healthier (and tastier IMO) than milk shakes or fast food smoothies. I think it important to note that even the drinks labeled "Real Fruit Smoothies" are not in fact good for you. At all. Period. And that includes popular Juice Joints. Sorry.


I keep a big bag of frozen berries from Costco in my freezer and plenty of coconut water around to make these smoothies throughout the summer months. They taste even better when sitting in the pool oddly enough. :)

Strawberry Lime Aide Margarita Swirl Popsicles




There's one National Food Holiday that I look forward to every year.  No, not National Nutella Day (I'm sure there's one of those) but National Margarita Day! It couldn't fall on a better day as far as I'm concerned. While I'll attempt to refrain from bragging that it's perfect patio sitting and margarita sipping weather here in Phoenix, I know most of the country is fed up with the blizzards and sub zero weather. Ick.

But let's think positively shall we? I think some genus of a person (obviously a woman) pinned National Margarita Day on February 22nd for a good reason. Perhaps for those who are at their wits end with snow days and snow boots and snow plows they can turn up the heat a bit, put on their sundresses and bathing suits and sip on a frosty margarita!


Makes perfect sense! I'm rational that way.









Let's savour every single tart, tangy and sweet drop of a Strawberry Lime Aide Margarita frozen style. Let the sticky sweetness slowly melt and drip on your fingers. Then slurp it up quickly so as not to waste a drop! These can be poured into tiny Dixie cups and put in the freezer with popsicle sticks like we did in the 80's (minus the tequila) or if you have a ZOKU pop maker you can have one of these Margarita pop's in less than 5 minutes. 


Yes, seriously.  5 minutes!










You Will Need


3 cups chopped strawberries
2 cups prepared lime aide (found in the frozen section)
3-4 ounces tequila of your choice
some sort of popsicle maker, mold or dixie cups w popsicle sticks (I love our ZUKO)



Make lime aide according to directions but use only 1/2 as much water!!!  In a blender, puree strawberries until smooth. Pour a bit of strawberry puree in mold. If you are using a conventional method you will need to put the molds/cups in freezer and wait 15-20 minutes. If you re using a ZOKU it will take about 1 minute. Pour a bit of the lime aide on top of frozen strawberry layer and let freeze. Repeat until the mold is full. 






Sit back. Kick your feet up and hang in there until Spring arrives!

"Skinny Pancakes"




This was one of my favorite breakfasts in the whole world when I was little. My dad made these for us for a special treat. Today, I make these occasionally through out the year and also as a Christmas morning tradition. I think most people call these crepes, but I like to stick with tradition and so we call these skinny pancakes.  We fill them with either scrambled eggs or just chunky, cinnamon applesauce, roll them up and top them with fresh, pureed strawberries and dust with powdered sugar.
 It doesn't get much better than this when your a kid!







You will need: 
3 eggs
1 1/4 c milk
1 tablespoon sugar
1/2 tsp salt
3/4 cup flour

Putting it all together: 

Whisk together and pour a very thin layer of batter into a hot, buttered non-stick skillet. Roll pan to completley cover the bottom of the pan with batter. Cook till golden brown (about 2 minutes) and flip over to cook other side, about 1 more minute.

Strawberry-Rhubarb Sauce




Oh how I love Spring time! All of my favorite foods are in season right now. Stop by your local farmers market (check here for locations near you) for super fresh produce.

This sauce takes just 15 minutes to make! I make a big batch and keep some handy for topping on yogurt, waffles and ice cream. Rhubarb has a fresh, tangy taste that pairs excellent with strawberries. I use agave nectar in place of sugar to balance out the tang.


To Make:

I used 7 or 8 stalks of rhubarb and 1 pint of strawberries. Wash.  Cut of the ends of the rhubarb (just like celery) then chop into 1 inch pieces taking care not to peel the skin off.
Hull strawberries then slice in half.
Put into large pot with 1 1/2cup of filtered water and 3/4 cup agave nectar.
Bring to a simmer over medium heat, stirring often. Cook for about 10 minutes till rhubarb is soft.
Keep unused portion refridgerated or freeze.

Makes about 2 quarts.
